Paradise Cake

A delicious cake filled with nuts and fruits and snuggled on a bed of apricot jam – yum!

Ingredients

Ready-made short-crust pastry

Apricot jam

6oz (170g) margarine

6oz (170g) caster sugar

2 eggs

3oz (85g) ground almonds

3oz (85g) chopped cherries

21⁄2oz (70g) chopped nuts

9oz (250g) dried fruit

Line a large swiss roll tin with the pastry and spread with jam. Cream the margarine and sugar together and then beat in the eggs. Add the other ingredients and then spread the mixture over the jam. Bake for 25 minutes at 180°C/350°F (gas mark 4).
